This is just remarkably good to eat. A free range duck leg is flavoured with salt, sugar, spices and citrus fruits and cured for 3 hours. It is then vacuum packed with fresh herbs and duck fat and cooked slowly for 14 hours. This results in a very tender and flavoursome meat.
Here is how to serve it.:-
Place the bag in warm water for 2 minutes to soften the fat and juices, before lifting out the leg. Discard the bag and its remaining contents. (though the juices can make a very nice gravy)
Place the leg on a preheated tray in a preheated oven at 190+ degrees to heat through thoroughly and crisp up the skin. This should take between 18 and 20 minutes. This is about the same time you will need to prepare vegetable. Dinner party standard in half an hour!
